Cooking Corner: Dessert on a college budget

While on a college budget, many students are forced to go without dessert. Cost, ingredients, or a lack of kitchen appliances are the most common limitations. The solution is to create a dessert that costs less than ten dollars and can be easily cooked in a microwave. In compliance with these requirements, this cake consists of only basic ingredients and simple cooking processes.

Ingredients:
1. 4 Tablespoons of flour (non-self rising)
2. 4 Tablespoons of sugar
3. 2 Tablespoons of baking cocoa
4. ¼ Teaspoon of baking powder
5. 1 egg
6. 3 Tablespoons of milk
7. 3 Tablespoons of oil
8. A splash of vanilla
9. Two coffee mugs

Preparation
Begin by mixing all the dry ingredients together. Then, add the egg, oil, milk, and vanilla. This should create a consistency equivalent to pancake batter. Once the batter is ready, pour it into two coffee mugs in equal proportions. The cake batter does rise and if too much is in the mugs, they will overflow. Once the batter is poured, place the mugs into a microwave one at a time and cook on the high setting for 2 – 2.5 minutes. Once the cake is finished cooking, it can be removed from the mug. Whipped cream, caramel, or chocolate syrup are all excellent toppers. For a little extra flair, try adding chocolate chips or peanut butter to the mix.
