Summer Squash and Orange Muffins

When mothers drop their children off for a new year of school, they often leave behind vegetables in a futile attempt to get their kids to eat more healthily. Some vegetables, such as carrots or tomatoes, will be used pretty quickly. However, some vegetables no one knows what to do with. What if a summer squash gets left behind? This is a vegetable that no self-respecting college student even knows exists, so when they find one hanging out in the fridge, they wonder what to do with it. Some students may take that as a challenge to invent a delicious treat. One such invention is Summer Squash and Orange Muffins.

Ingredients:

3 eggs
1 ¼ cup granulated sugar
¼ cup of honey
¼ cup of orange juice or 2 oranges torn apart and squeezed by hands
3 cups flour
1 teaspoon baking soda
¼ teaspoon baking powder
3 cups of summer squash (or zucchini, cucumber, or any similar unwanted vegetables)
Cinnamon, cloves, nutmeg, and other spices by personal preference

Directions:

Preheat oven to 350°F. Either fill muffin tray with muffin cup liners or spray with vegetable oil. Mix all ingredients (in whatever order appeals to the chef, as it should not make a difference as long as it is all well mixed). Mix until all ingredients are thoroughly mixed in and it is at muffin batter consistency. For anyone making muffins for the first time, this means that the mixture is a thick consistency that will stick to the sides of a bowl, but after awhile will slide down the sides. If it is not easy to scoop, then it is too thick and milk should be added until it is the desired thickness. If it is too thin, then simply add more flour until it thickens up. Fill all of the muffin cups until they are about three quarters full. Bake for about 25 minutes or until a toothpick comes out clean.

Makes approximately 24 muffins.

Now, not only has an unwanted vegetable been used in a way that no one will even know it is there,but there are also some slightly bizarre sounding muffins that will taste quite good. It also makes for a great breakfast on the go. Just grab a muffin on the way to class and breakfast is covered. Eat and Enjoy!
