Cooking Corner: Perfect pumpkin cookies

It’s that time of year for anything and everything pumpkin! Be it pumpkin bread or pumpkin pie, pumpkin is the fall flavor to savor. While pumpkin muffins, breads, and pies are easy to find, pumpkin cookies are rare. So here is an easy recipe to make your own sweet and savory spiced pumpkin cookies.

Ingredients:
1. 1 pkg carrot cake mix
2. 1 cup canned pumpkin
3. ¼ cup margarine or butter (melted)
4. 1 egg
5. 1 can (16 oz) cream cheese frosting
6. 36 candy corn pumpkins

Directions: Heat oven to 350°F and grease a cookie sheet. Combine cake mix, pumpkin, margarine, and egg in a large bowl. Using a tablespoon, drop the dough onto the cookie sheet. The dough does not flatten much during baking, so make sure to form the dough into a “cookie shape” before baking. This works best by pressing the dough with the back of a wet spoon. Bake for 10-15 minutes, or until the center is set and puffed. Remove the cookies and cool for 15 minutes. Frost the cooled cookies and put one candy pumpkin on each. Makes 3 dozen.
