Cooking Corner: Peppermint Bark

With the holiday season fast approaching you may be craving something sweet to eat. A great treat to make whether you are in an apartment or your dorm room is peppermint bark. It’s very sugary and delicious, but extremely easy to make.

Ingredients:
• Peppermints (1 cup crushed)
• White Chocolate Chips (2 lbs)

The first step to making the candy is to put the peppermint candies in a plastic bag and use a rolling pin or hammer to crush them. If you are having trouble doing this you can also use scissors to cut them. You want to make sure they are crushed fairly well so the bark will be easier to eat. Once this is done put the white chocolate chips in a large bowl in the microwave (you may use a double boiler to melt the chocolate as well). You want to take the white chocolate out about every thirty seconds and stir until it is soft. The final stir should show that all of your chips are melted (they may still have their shape before you stir). Be careful not to leave the chocolate in the microwave for too long, because it will burn. After the white chocolate is melted, mix in the crushed peppermint. Then scoop the mixture onto some wax paper and flatten it. You can now put the candy in the fridge to harden or let it sit out. Either way, after about ten minutes you will have a tasty holiday treat!
