Cooking Corner: Asian Slaw

This is not the typical coleslaw. This sweet and tangy recipe is the perfect side dish, which is just as good the next day, but from experience there is rarely any leftovers.

Ingredients:
2 tbsp. vegetable oil
2 tbsp. apple cider vinegar
2 tbsp. white sugar
1 package chicken flavored ramen OR 2 tbsp. low sodium ramen mix, 2 tbsp. onion powder, 2 tbsp. ground ginger, and 2 tbsp. garlic powder, along with salt to taste (mix should be stored in an airtight container)
1 package shredded green cabbage OR 1 small head of cabbage shredded
¼ cups sliced almonds or sesame seeds (optional)

Directions:
1. To make the dressing, mix together vegetable oil, apple cider vinegar, sugar, and ramen seasoning in a medium bowl.
2. In a large bowl combine shredded cabbage, crushed ramen noodles, and almonds.
3. Pour dressing over cabbage. Toss until the cabbage is evenly coated.
4. Best served chilled.
