Cooking Corner: Pumpkin Pie

It is that time of the year again. The leaves are falling and the holidays are just around the corner. As Thanksgiving approaches, there is much to look forward to including a break from classes, a delicious dinner, and of course, dessert. In the spirit of fall, pumpkin pie is a perfect dish for those who indulge in the holidays. The following recipe is perfect for those who enjoy the spices and flavors of the season.

Ingredients:
1 cup sugar
½ tsp salt
1 tsp cinnamon
1 tsp nutmeg
½ tsp cloves
1 Tbsp melted butter
2 eggs
1 cup sweetened condensed milk
1 cup pumpkin
1 9-inch pie crust

Combine the dry ingredients in a mixing bowl. Next, add the butter and eggs followed by the pumpkin and sweetened condensed milk. Pour the pie filling into the crust. Bake at 475°F for 12 minutes, then lower the temperature to 325° and bake until the pie is finished. The pie is done when a knife comes out clean. Enjoy the pie and the break from classes.
