Simple roasted red potatoes, peppers, and onions make an easy and filling meal. This vegetable medley makes it easy to stick to new years resolutions and can be prepared in a pinch.
Makes two dinner servings, or four to six side dish servings
Ingredients
10 red potatoes, quartered
½ red pepper, cut into chunks
½ green pepper, cut into chunks
½ red onion, cut into chunks
1-2 cloves of garlic, minced
2 tbsp of olive oil
salt and pepper to taste
Directions
Preheat oven to 400 degrees Fahrenheit and grease cookie sheet. Then, after washing and cutting vegetables, place them in a large bowl with the garlic, olive oil, salt and pepper. Cover the bowl with a plate and shake until all of the vegetables are coated with olive oil. Arrange potatoes, peppers, and onions evenly on a baking sheet. Bake for 25-30 minutes or until the potatoes are soft. Enjoy!
