Cooking Corner: Cranberry Orange Muffins

Breakfast is the most important meal of the day. This week, spice up your breakfast with cranberry orange muffins!

2 cups all-purpose flour
⅔ cup sugar
2 tsp baking powder
¼ tsp salt
1 cup cranberries
½ ounce orange zest
⅔ cup 2% milk
¼ cup melted butter
½ tsp vanilla extract
1 large egg, beaten

This recipe can of course also be made with fresh, un-fermented fruit.
Preheat the oven to 400F.  Combine all the dry ingredients in a bowl with a whisk.  In a separate bowl, combine all the wet ingredients.  Fold the dry ingredients into the wet, then mix together until smooth.  Scoop into a greased muffin pan and bake for 18 minutes, or until a toothpick comes out clean.  Makes about one dozen muffins.
