Cooking Corner: Kabobs!

What food is there that is not better on a stick and soaked in teriyaki sauce? Skewers are a grilling classic, and just because it is not quite summer does not mean grilling has to wait. Follow these directions for great results every time.

If using wooden skewers, soak them in water first. An approximately 20 minute soak prevents them from burning. Then, prepare the food. Steak or shrimp are other meat choices. Add variety in vegetables with mushrooms, cherry tomatoes, zucchini, or squash.

Cut all of the foods into small, similarly-sized pieces so they will cook quickly and evenly. At this point, the meat can be marinated or have teriyaki, soy, or another type of sauce applied. Slide these pieces onto the skewers gently, so the pieces do not break. Less confident grill operators can consider putting all the meat on one stick and the vegetables on the other. This prevents the disaster of overcooking the meat but leaving the vegetables basically raw or vice versa.

Cook the kabobs covered over medium heat. It should take anywhere between 8 and 15 minutes, depending on how close they are to one another and how hot the grill is. Make sure the meat is done and remove. Add a plate of rice for a complete and delicious meal!
