Cooking Corner: Banana Chocolate Cupcakes

Bananas and chocolate are an award-winning combination from breakfast to dessert. This cupcake recipe is reminiscent of freshly baked banana bread with a sweet and chocolatey twist. If you are looking for a tasty treat to brighten up a finals study session, or simply crave a delicious dessert, this recipe is a quick fix. Recipe is courtesy of bettycrocker.com and makes two dozen cupcakes.

Ingredients:
-1 box yellow cake mix
-1 cup mashed very ripe bananas (2 medium)
– ½ cup water
-1/4 cup butter or margarine, softened
-3 eggs
– ¾ cup miniature semisweet chocolate chips
-1 container chocolate frosting

Directions: Preheat the oven and place cupcake liners in standard-sized muffin pan. In a large bowl, mix the cake mix, bananas, water, butter and eggs with an electric mixer on low speed for 2 minutes. Stir in the chocolate chips and spoon the batter into the muffin cups. Bake for 18-24 minutes or until an inserted toothpick comes out clean. Remove the cupcakes from the pan and cool completely, about 30 minutes. Frost the cupcakes and enjoy!
